We made it to Friday, everyone! To celebrate, I would like to share my favorite no-bake cookie recipe. It’s my favorite because, well, it has Nutella. And with all this warm weather, who really wants to bake anything? Yeah, me neither.
You will probably start seeing a trend with all of the recipes I share…there is a large room for error. Basically, as long as you get the proportions right you won’t go wrong. True story: I once considered starting a food blog titled “The Half-Hearted Baker” because that is totally what I am. I love food and I love baking, but I am sometimes (read: most times) not patient enough for the end result and I also have the tendency to run out of ingredients and make up substitutes that sometimes do/do not work out.
I’m not sure I have ever made a full batch of this recipe. Usually by the time I get around to making it the Nutella jar is nearly empty (Whattt?? How did that happen??), but I have found that even when cutting everything in half you can get 10-12 good size cookies. That is just enough to satisfy a craving but not enough to make you feel terrible when they are all gone the next morning (I leave some for my husband, too, okay?!).
- 2 cups sugar
- ¼ cup cocoa
- ½ cup milk
- ½ cup margarine
- 1 tsp vanilla
- pinch of salt
- ¼ cup peanut butter
- ¼ cup Nutella
- 3 cup quick oats
- Over medium heat, cook sugar, cocoa, milk and margarine. Boil for one minute.
- Remove from heat and stir in vanilla, salt, peanut butter, Nutella and oats. Stir until combined.
- Drop by teaspoon on wax paper and let cool in refrigerator. (These need to be stored in the fridge as well)

A couple of notes: If you are not a big Nutella fan you can still use this recipe for regular no-bake chocolate cookies. Just take out the Nutella and up the peanut butter to 1/2 cup. Also, you HAVE to use margarine, not butter. Once, in a moment of weakness, I realized we didn’t have margarine and used real butter instead. Do you know what happens to real butter when it’s in the refrigerator? Yeah, it gets hard. Like, really hard. That’s exactly what happened to these cookies. They were still edible, but not nearly as enjoyable. Yes, I know that margarine is not the healthiest. Nutella is not the best for the environment, either, so really chalk this recipe up to an emotional health thing and make it when you really need it. ;)
